This elegant Cranberry Pistachio Mint Goat Cheese Appetizer is perfect for Christmas. It takes just five ingredients and is so easy to assemble.
Last night, my husband and I attended a live concert at Grace Farms by the Broadway Inspirational Voices. It was an incredibly inspirational performance, putting the Christ back into Christmas for me. Around this time of year, I start stressing out about decorating the house and buying gifts (can you relate?!?!). So, taking the focus off of this busy-ness and placing it on what I can do with the gifts God has given me to help others helps keep things in perspective.
Broadway Inspirational Voices is a non-profit organization comprised of a diverse choir of Broadway artists united to change lives through the power of music and service. They are in the midst of a kickstarter campaign to raise enough money to create their second album Great Joy II: Around the World (their first album, Great Joy: A Gospel Christmas received a Grammy Award nomination). All the proceeds from their record sales go towards their outreach programs. I am sharing this with you because I was so inspired by the message shared by this group of talented folks.
I made this Cranberry Pistachio Mint Goat Cheese Appetizer recently for our Women’s Ministry Christmas party, along with a Cranberry Pecan Brie Appetizer (recipe to come). It’s so easy to assemble and beautiful, and perfect for a party. Honestly, I can’t even call this a recipe. All you do is roll a log of goat cheese (I used Trader Joe’s Honey Goat Cheese) in a mixture of dried cranberries, toasted pistachios and chopped mint. Just a drizzle of honey on top and you’re good to go.
Cranberry Pistachio Mint Goat Cheese Appetizer
Ingredients
- 1 log goat cheese I used honey goat cheese from Trader Joe's
- dried cranberries
- toasted pistachios I used unsalted toasted pistachios from Trader Joe's
- chopped mint
- honey
Instructions

Toss together dried cranberries, pistachios and chopped mint. Roll goat cheese log in cranberry nut mint mixture, pressing mixture into goat cheese log. Drizzle with honey and serve with crackers.

Love this idea! I usually stuff dates with goat cheese which is amazing but a bit time consuming, this would be easier and just as delicious!

Stuffed dates sounds delicious! You could chop up dates and walnuts and roll the goat cheese in it.

Thanks Min! I know goat cheese isn’t everyone’s favorite. You could substitute low-fat cream cheese.
