These Clean Eating Stuffed Peppers can be frozen and reheated for an easy weeknight dinner.
If you’ve been following my blog, you probably know that I believe in clean eating. Clean Eating is all about avoiding processed foods, chemicals and preservatives. It’s about eating real food and staying away from refined products. Sometimes it might seem easier to just pick up a frozen meal from the supermarket for dinner, but if you read the label, oftentimes, there will be ingredients added that you wouldn’t normally cook with, and they’re not as healthy as the labeling might lead you to believe.
Eating and cooking clean can be easy, especially if you plan ahead, and stock your pantry with clean ingredients. Having a clean pantry, and a refrigerator and freezer stocked with clean food and meals will make mealtime that much easier and a no-brainer.
Tiffany McCauley of The Gracious Pantry has just published a cookbook, Clean Eating Freezer Meals, which shows you that convenient meals can be healthy. Not only can they be made ahead, but they can easily be frozen and served at a later date. Most of the recipes in the book are very budget friendly and easy-to-assemble, and include entrees, soups, snacks and desserts.
Looking through Tiffany’s cookbook, what impressed me the most was how easy and approachable her recipes are. Her recipes are all very doable and don’t require any fancy ingredients. There were also some interesting ideas I’d never thought of, including her savory breakfast muffins (made with ground turkey) and frozen (uncooked) scrambled eggs.
I made Tiffany’s Stuffed Bell Peppers and they were delicious, although I didn’t have any extras to freeze. Next up, I’d like to try her veggie-packed lasagna rollups.

Clean Eating Stuffed Peppers
Ingredients
- 5 bell peppers assorted colors make a pretty presentation
- 2 tablespoons olive oil
- 1 red onion chopped
- 1 cup mushrooms chopped
- 1 cup carrots thinly sliced
- 6 cloves garlic minced
- 1 tablespoon fresh rosemary chopped
- 1 tablespoon fresh thyme chopped
- 1 pound ground turkey
- salt and fresh ground pepper to taste
Tomato Sauce
- 1/2 cup no-sodium added tomato sauce
- 1/2 cup low-sodium chicken broth
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- salt and fresh ground pepper to taste
Instructions

Cut tops off of bell peppers; scoop out membranes and seeds using a spoon or your fingers. Slice off part of the pepper bottoms if needed to help them stand up. Chop up "lids" of peppers.

In a large skillet, heat the oil over medium; add chopped pepper, onion, mushrooms, carrots, garlic, rosemary and thyme; cook until vegetables soften, about 5-6 minutes. Add turkey and brown; season to taste with salt and pepper.

In a small bowl, mix together tomato sauce, chicken broth, garlic powder, onion powder, salt and pepper.

Fill peppers with meat stuffing. Pour tomato sauce in the bottom of a snug casserole or baking dish (choose a dish to fit the size of your peppers), reserving 1/2 cup to spoon on top of peppers. Place peppers upright in casserole dish. Spoon reserved sauce on top of peppers.

To freeze, cool completely, then cover with an airtight lid for up to 4 months. To serve, thaw completely in the refrigerator. Bake at 375 degrees Fahrenheit for 35-40 minutes, or until peppers are completely heated through. Serve with tomato sauce ladled over peppers.
