Saucy Barbecue Meaballs Recipe

These saucy meatballs take just 30 minutes to cook, and are great served with mashed potatoes and steamed broccoli.

Ingredients

Barbecue Sauce

  • 2 1/2 tablespoons balsamic vinegar
  • 1 teaspoon ground cumin
  • 1/4 teaspoons Spanish smoked paprika
  • 1/8 teaspoon ground cloves
  • 1 1/2 cups tomato sauce
  • dash cayenne pepper
  • 1/4 cup water

Chicken Meatballs

  • 1 pound ground chicken
  • 1/4 cup gluten-free bread crumbs
  • 2 tablespoons water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 tablespoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

Instructions

Barbecue Sauce

  1. Place barbecue sauce ingredients in a saucepan and bring to a simmer over medium heat; reduce heat to low and cook while you make the meatballs.

Chicken Meatballs

  1. Preheat oven to 375 degrees.
  2. In a bowl, mix together ground chicken, breadcrumbs, water, oregano, basil, thyme, chili powder, salt and pepper. Form into ~ 16 meatballs. Place on baking tray lined with parchment paper. Bake for 20 minutes. Transfer meatballs to sauce and cook on low for 10 minutes. Serve.
