Mixed Green Salad with Roasted Beets, Orange, Pomegranate Seeds and Pumpkin Seeds
Salads are the perfect way to eat a wide variety of fruits and vegetables. Be inspired and try your own selection of fruits (apples, pears, grapefruit, grapes), vegetables (red bell peppers, red cabbage, cucumbers, carrots), nuts and seeds (walnuts, almonds, pine nuts).

4handfuls of mixed salad greens
4small roasted beets
2orangespeeled and sliced
4tablespoonspomegranate seeds
4tablespoonstoasted pumpkin seeds
2tablespoonextra virgin olive oil
4tablespoonsfresh orange juice
salt and pepperto taste
Instructions
Arrange salad greens on four plates. Place roasted beets and sliced oranges around salad. Sprinkle with pomegranate seeds and pumpkin seeds.
Mix together olive oil and orange juice. Season with salt and pepper. Drizzle on salad just before serving.
