cut into 2" pieces

cut lengthwise into 1/2" slices

cut lengthwise into 1/2" slices

extra virgin olive oil

dried oregano
thyme or rosemary (use fresh if you have it)

salt and freshly ground pepper
to taste

Yogurt Sauce for serving

Gently toss vegetables with olive oil, herbs, salt and pepper.

Grill on a sheet of aluminum foil until done, about 10-12 minutes, turning pieces halfway through.
