Super Healthy Tomato Pasta Sauce

If you like a thinner sauce, add stock or water until you reach the desired consistency. This sauce is great used in any recipes that call for tomato sauce or spaghetti sauce. I've used it on pizzas, chicken parmigiana, and spaghetti and meatballs. You can freeze this sauce.

Ingredients

  • 1 1/2 tablespoon olive oil
  • 1 medium onion chopped
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 red bell pepper chopped
  • 10 ounces mushrooms chopped
  • 4 garlic cloves chopped
  • 3 28- ounce cans whole peeled tomatoes pureed in a food processor with all the juices
  • salt and pepper to taste

Instructions

  1. Heat oil in a large saucepan. Add onion, carrots, celery, bell pepper, mushrooms, and garlic. Saute until onions are softened, about 3-4 minutes. Add tomatoes and bring to a boil; reduce heat to low and simmer for 30-40 minutes, until vegetables are soft. Use an immersion blender or food processor to puree sauce. Season with salt and pepper.
