Gluten-Free Marbled Chocolate Banana Bread

Ingredients

  • 1 cup gluten-free oat flour
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 cup organic sugar
  • 1/4 cup olive oil
  • 1 1/2 cups mashed ripe bananas
  • 2 eggs lightly beaten
  • 1/3 cup plain low-fat Greek yogurt
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 3 tablespoon unsweetened cocoa powder

Instructions

  1. Preheat oven to 350 degrees. Sift together flour mix, almond flour, baking soda and salt. Place sugar and coconut oil in a large bowl and beat until blended. Add banana, eggs, yogurt, vanilla and cinnamon. Beat until smooth. Add dry ingredients and beat until just blended. Remove 1 cup of batter to a small bowl and stir in cocoa powder.
  2. Spoon light and dark batter into a 8 1/2 x 4 1/2 inch loaf pan that has been coated with cooking spray. Using a butter knife to draw swirls through the batter.
  3. Bake for 1 hour 5 minutes or until a toothpick comes out clean when inserted into the center of the loaf. If top browns too quickly, cover with foil the last 10 minutes of baking. Cool completely on a wire rack.
