Smashed Avocado Toast with Egg and Smoked Salmon is a satisfying and easy breakfast to make.
I’m still cleaning up after the holidays believe it or not. My sister-in-law and her family stayed with us over the holidays…then there was the mad scramble to get my oldest son ready to leave the country for a college course in Asia, and packing up the rest of the clan for a quick get away to Florida. So, you can imagine the state of affairs that I left our house in. It was a rude awakening when we returned. Christmas decorations and tree to be cleaned up, piles of mail and papers that had been shoved aside during the last few weeks, laundry to be done and more. And, a few items in my fridge that were to be used up from the holidays, including a pack of smoked salmon from Costco’s.
This is an easy breakfast to make and very satisfying. I boil a few eggs at a time so I have extras on hand. It doesn’t take any more time to boil four eggs than one, so just do it. I also keep a few avocados on my kitchen window sill, some riper than others. That way, I have a few to use throughout the week.
Avocado Egg Smoked Salmon Breakfast Toast
- 1 slice gluten-free or whole grain toast
- 1/2 avocado
- a squeeze of lemon juice
- salt and fresh ground pepper
- 1 hard boiled egg
- 1 ounce smoked salmon
- South African Smoke Seasoning Blend I used Trader Joe's
- chopped scallions
- Smash avocado with lemon juice; season with a little salt and pepper. Spread on top of toast. Slice hard boiled egg and lay on top. Lay smoked salmon on top of egg. Grind Smoke Seasoning Blend on top and sprinkle with scallions.
