A few weeks ago, I was on a Chipotle restaurant copycat kick and had batches of Chipotle Style Cilantro Lime Brown Rice, Slow Cooker Chipotle Style Black Beans, and Slow Cooker Chicken Carnitas sitting in my refrigerator.
I ate all different combinations of these throughout the day – some days just rice and beans, or black beans with the soup and hot sauce. One day I made enchiladas, some with leftover chicken carnitas and some with the black beans.
There are so many ways to enjoy all these staple ingredients once you make a batch. This Chipotle Style Chicken Burrito Bowl is probably my favorite and most fun.
You can customize your burrito bowl any way you like – rice, beans, chicken, guacamole (mashed avocado, lime juice and salt), salsa (fresh tomatoes, onion, cilantro, jalapeno, salt), Greek yogurt, shredded low-fat cheese, and baby kale make great toppings.
Personally, I went heavy on the baby kale which I love.

- baby kale
- Chipotle Style Black Beans
- Slow Cooker Chicken Carnitas
- mashed avocado with lime juice and salt
- shredded low-fat cheddar cheese
- fresh lime wedges
- Layer ingredients in a bowl. Add desired toppings.
