Philippians 4:13 “For I can do everything through Christ, who gives me strength.”
This blog has been a wonderful journey…
After working 17 years in corporate finance at a Fortune 500 company, I decided to stay home with my four boys. That’s when my journey began with my blog, Jeanette’s Healthy Living, in July 2010.
I started my blog because I was spending a lot of time making meals for family and friends with special dietary needs due to illness… friends who have cancer, my father-in-law who lived with me, my husband who is lactose intolerant, and my youngest son who was diagnosed with multiple food allergies. While each person’s dietary needs and restrictions have been different, they have all shared a common thread: every meal has had to taste great – to be eaten, not left untouched, for the nutrients their bodies need and savored for the pure sake of simply being able to enjoy a great meal.
While I’ve always loved cooking, out of these experiences I developed a passion for cooking that is health-focused while never compromising on the need to be full of flavor. Through this blog, I hope to share some of the foods I’ve prepared for friends undergoing cancer treatment, allergy-friendly foods I’ve cooked for my family, and lots of other delicious, healthy foods that I make day to day. While some of the recipes may stem from cooking for someone with a special dietary need, I’ve developed them to make sure that anyone will love what they’re eating.
I use whole ingredients in my recipes, and try to minimize the use of sugar, salt and fat, without sacrificing flavor. You’ll never feel like you’re missing out because one of my goals is to develop recipes that are full of flavor and pizazz using whole ingredients and lots of spices.
I am excited about the prospect of spreading the word on healthy living through food and taking care of our bodies. After all, we only have one body so we should take great care of it. I hope you will join me on this journey to better health.
I believe God gives each of us gifts and talents to serve those around us and make this world a better place. Some of the gifts I have been blessed with include cooking and reaching out to people going through tough times who are in need of love and companionship. Now that I know what some of my gifts and talents are, I am keeping my eyes open for opportunities that use these gifts and talents to help others. I hope you will find inspiration through my blog to discover your own gifts and talents, and join me in this journey to use them to make this world a better place.
Just a couple of notes:
- If you have cancer or are cooking for loved ones with cancer, please take a look at my anti-cancer recipes, vegan and vegetarian recipes, as well as the smoothies and pureed soups. I also have a few recipes for people on a low residue diet. These are recipes that contain ingredients that are believed to help fight cancer, many of which I’ve made for friends with cancer.
- If you have specific food allergies, please note that most of my recipes are gluten/casein-free adaptable. Most of my recipes are gluten-free recipes, and I also have dairy-free recipes. My vegan recipes are gluten/dairy/egg free.
- If you’re on a soft food diet, I have a collection of soft food diet recipes for you.
