After working 17 years in corporate finance at a Fortune 500 company, I decided to stay home with my four boys. That’s when my journey began with my blog, Jeanette’s Healthy Living.
I started my blog because I was spending a lot of time making meals for family and friends with special dietary needs due to illness… friends who have cancer, my 92-year old father-in-law who lives with me (my father-in-law passed away in March 2011, we will miss him dearly), and now my youngest son who was diagnosed with multiple food allergies in December 2010. While each person’s dietary needs and restrictions have been different, they have all shared a common thread: every meal has had to taste great – to be eaten, not left untouched, for the nutrients their bodies need and savored for the pure sake of simply being able to enjoy a great meal.
While I’ve always loved cooking, out of these experiences I developed a passion for cooking that is health-focused while never compromising on the need to be full of flavor. Through this blog, I hope to share some of the foods I’ve prepared for my allergy-ridden son, for friends undergoing cancer treatment, and lots of other delicious, healthy foods that I make day to day. While some of the recipes may stem from cooking for someone with a special dietary need (like my youngest son), I’ve developed them to make sure that anyone (like my husband and other sons) will love what they’re eating.
I use whole ingredients in my recipes, and try to minimize the use of sugar, salt and fat, without sacrificing flavor. Many of my recipes are vegetarian because I do believe a plant-based diet is heart healthy and the best way to fight cancer and other diseases. But I also recognize that many people want to eat more healthfully without giving up meat. So you’ll also find recipes using lean proteins such as poultry and fish, cooked in healthful ways. You’ll never feel like you’re missing out because one of my goals is to develop recipes that are full of flavor and pizazz using whole ingredients and lots of spices.
Just a couple of notes:
– If you have cancer or are cooking for loved ones with cancer, I have tried to include a notation at the end of posts that contain anti-cancer ingredients. Many laboratory tests have been done that have shown that these ingredients help fight cancer. I have found that these anti-cancer ingredients are heart healthy and generally healthy for everyone, so I hope my recipes are a jumping point for anyone looking to eat more healthfully in general.
– If you have specific food allergies, please note that most of my recipes are gluten/casein-free adaptable. I am happy to help you adapt any of the recipes to meet your dietary needs.
