Next Tuesday is Valentine’s Day and I’ve been collecting cheery and bright ideas on my Valentine Pinterest Board the past few weeks, some healthier than others. Since February is Heart Disease Awareness Month, I wanted to come up with an easy Valentine’s Day treat that is not only sweet but heart healthy. I got this super easy idea from Lexie’s Kitchen and added heart healthy nuts to them.
Chock full of heart healthy walnuts (high in omega-3 fatty acids) and pomegranate seeds (or arils) which contain antioxidants with heart-protecting benefits, these dark chocolate clusters make the perfect treat for your loved ones. Not to mention that dark chocolate also has protective effects for the heart.
- 8 ounces dark chocolate
- ¾ cup toasted walnut pieces
- ¾ cup pomegranate seeds
- Melt chocolate in double boiler. Make chocolate clusters one of two ways: (1)Mix walnut pieces and pomegranate seeds in with chocolate and put spoonfuls of chocolate mixture on parchment paper lined baking sheet; (2) line mini-muffin tin with paper liners. Spoon a little melted chocolate in the bottom of the liner. Sprinkle a few walnuts and pomegranate seeds on top, then drizzle more melted chocolate on top. Sprinkle another layer of walnuts and pomegranate seeds on top, and finish with a drizzle of melted chocolate.
- Place in refrigerator until firm.
