I love spice rubs for quick and easy dinners. You might have seen my Spice Rubbed Grilled Chicken Wings a few weeks ago. Fish is one of those foods that seems to intimidate a lot of people when it comes to cooking. It took me years before I realized how easy fish was to cook.

One recent afternoon, half an hour before my husband was leaving for the airport for a trip, I threw together this simple but healthy Spice Rubbed Roasted Salmon for him – it took just 10 minutes to cook this piece of salmon in my toaster oven. While the salmon was in the oven, I tossed together a simple corn and tomato salad made from leftover corn on the cob, fresh summer tomatoes, a touch of extra virgin olive oil, fresh ground black pepper and smoked sea salt (a find at Home Goods).

Fast Spice Rubbed Roasted Salmon

Serves: 1
  • One 4-ounce piece fresh salmon
  • a few drizzles of extra virgin olive oil
  • Jamaican jerk spice mix or your favorite spice mix
  1. Set oven to broil setting. Lightly oil foil lined baking tray. Place salmon on top. Rub lightly with olive oil and sprinkle with spice mix. Broil salmon until cooked through, about 10 minutes, depending on thickness of fish.

    Is there a recipe for the corn and tomatoes under the salmon? It looks delicious.

    • For the corn and tomatoes, I simply tossed together some leftover corn on the cob, fresh tomatoes, extra virgin olive oil, salt and pepper. With fresh produce, you don’t have to do much to make it taste good 😉
