Lately I’ve been bitten by the baking bug and getting ready for the holidays by baking easy cookie recipes like these moist and delicious Peanut Butter and Jam Bar Cookies.

Peanut Butter Strawberry Jam Bar Cookies2
Everyone has their favorite holiday cookies, whether they’re chunky like my Cranberry Coconut Chocolate Chip Oatmeal Cookies, reminiscent of childhood favorites like these Peanut Butter Cookies with Dark Chocolate Drizzle, classic like Insanely Delicious Brownies, or old fashioned like today’s Peanut Butter Jam Bars. That’s why it’s nice to make an assortment – so everyone can find something they like.

These Peanut Butter and Jam Bar Cookies are decadently delicious, and the best part is that they’re jam packed with healthy whole ingredients ~ organic oat flour, organic rolled oats, organic peanut butter, organic strawberry jam, organic coconut palm sugar and organic virgin coconut oil. That’s why I bake – so I can control each and every ingredient that goes into my cookies (yup, I’m a bit of a control freak, just ask my husband).

My boys loved these cookies, but the best test yet was giving a batch to my neighbor’s husband, who has a wicked sweet tooth. According to my girlfriend, he devoured them!

sounds great my only thought- who makes an eight by eight? no one I know doesn’t make enough

    • Kellie – if you want to make a bigger batch you could probably just double the recipe and use a 13×9. These are very rich cookies.

  5. DELISH! Being a control freak is a good thing when it comes to baking treats. ;) Thanks for sharing, girl. Pinning!

    • Thanks Stacy – I’ll have to contain my control issues to baking then ;). Hope you’re doing well. Happy Holidays!

  6. Hi, Jeanette – I am going to try these out tonight. I have a similar recipe, but it is not vegan. This looks great. I also like your photos – the microlens focuses in on a nice point and obscures the rest – very beautiful. Warm regards, Shanna

    • Hi Shanna, hope you enjoy these! Thanks for your kind remarks about my photos – it’s a work in progress so I appreciate your feedback. Take care.

  7. I hear you about the baking bug, it’s hard to resist during the holidays!

    • Sylvie – I see you’ve been up to some baking too! I don’t bake that much, but during the holiday season, I seem to baking all the time which makes my boys VERY happy!

  8. These look great, I love PB & J and these bars sound wonderful with all the oats in here :) My son would love these too!

  9. Looks really delicious! I’m still not Americanized enough in terms of PB and I rarely buy the jar (maybe because of that my kids don’t eat PB too…). I still need to try PB and Jelly sandwich! :D I think I prefer eating your PB and Jam bar cookies!

  10. This is definitely a must-bake for me. We are fans of peanut butter.

  11. My son would devour all of these!

  12. Ooh, I’m loving your healthier holiday treats! These gluten free bars sound delightful. So many great add-ins.

  13. these sound amazing! Happy holidays!

  14. This recipe was amazing. I used almond butter instead of peanut, and it was super tasty. I was thinking next time I would want to make them a bit firmer. Do you have any suggestions to do that? Thanks again.

    • Chelsea, so glad you liked these bar cookies. You might try adding an egg (it won’t be vegan then) to the cookie dough to bind it.
