These Peanut Butter and Jam Bar Cookies are perfect for the holidays. They’re gluten-free and vegan too, so almost anyone can grab one from the cookie tray.

Lately I’ve been bitten by the baking bug and getting ready for the holidays by baking easy cookie recipes like these moist and delicious Peanut Butter and Jam Bar Cookies.

Everyone has their favorite holiday cookies, whether they’re chunky like my Cranberry Coconut Chocolate Chip Oatmeal Cookies, reminiscent of childhood favorites like these Peanut Butter Cookies with Dark Chocolate Drizzle, classic like Insanely Delicious Brownies, or old fashioned like today’s Peanut Butter Jam Bars. That’s why it’s nice to make an assortment – so everyone can find something they like.

These Peanut Butter and Jam Bar Cookies are decadently delicious, and the best part is that they’re jam packed with healthy whole ingredients ~ organic oat flour, organic rolled oats, organic peanut butter, organic strawberry jam, organic coconut palm sugar and organic virgin coconut oil. That’s why I bake – so I can control each and every ingredient that goes into my cookies (yup, I’m a bit of a control freak, just ask my husband).

My boys loved these cookies, but the best test yet was giving a batch to my neighbor’s husband, who has a wicked sweet tooth. According to my girlfriend, he devoured them!

Peanut Butter Strawberry Jam Bar Cookies {gluten-free}

Serves: 12
  • 1 cup organic oat flour
  • 1 cup organic rolled oats
  • ¾ cup organic blonde coconut palm sugar
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ cup organic peanut butter
  • ¼ cup organic virgin coconut oil, melted
  • 1 cup organic strawberry jam
  1. Preheat oven to 375 degrees. Lightly grease 8x8 inch baking pan.
  2. Mix together oat flour, oats, coconut sugar, baking powder, cinnamon and salt in a mixing bowl. Add peanut butter and coconut oil. Mix until blended. Press half of mixture firmly in prepared pan. Spread strawberry jam on top. Sprinkle remaining oat mixture on top and pat down firmly.
  3. Bake 20-25 minutes until top is golden brown.
  4. Cool and cut into squares.

    • Kellie – if you want to make a bigger batch you could probably just double the recipe and use a 13×9. These are very rich cookies.

    • Chelsea, so glad you liked these bar cookies. You might try adding an egg (it won’t be vegan then) to the cookie dough to bind it.

  15. Jeanette, I made theses again today and they turned out great. I didn’t have to use an egg to bind them together. I just used a 8×11 pan and made them thinner. Thank you again for the wonderful recipe, they were a hit at my Christmas party.
