This Mango Coconut Mint Smoothie is perfect for breakfast, or as a mid-morning or afternoon snack. It’s also perfect for anyone on a soft food diet or liquid diet.

Last night, a freak accident happened at my husband’s softball game. One of the young men on the team collided with a team mate and ended up with a broken jaw. It was a playoff game, so the kids and I were there to watch. This young man is the same age as my oldest son, so even though he’s not my son, I could only imagine how tough a situation this was going to be.

I rushed him to the hospital where we met up with his parents. When we learned he had broken his jaw, the doctor proceeded to talk about the liquid and soft food diet he would have to be on for the next 3-6 weeks. I’ve taken care of and cooked for people who have been on a soft food and liquid diet before (three of my boys when they had their wisdom teeth pulled, my father-in-law who had Parkinson’s disease, and a friend with thyroid cancer who underwent radiation treatment), so strange as it might seem, I have a lot of experience preparing food for people who are on a soft food and/or liquid diet.

This morning, I made this Mango Coconut Mint Smoothie for my kids as I thought about what this young man could eat when he comes out of surgery today. It will be important to pack protein and nutrition into every sip or bite. This smoothie recipe uses Greek yogurt, which is very high in protein. One cup of Greek yogurt has 20+ grams of protein.

This smoothie can be made thicker or thinner, depending on the consistency you’re looking for. Add more milk for a thinner consistency, or some ice for a thicker one. I made mine more of soft pudding consistency.

Adjust the consistency of this smoothie according to your taste preferences. Add more milk for a thinner consistency, or some ice for a thicker milkshake like quality.

  1. Place all ingredients in a blender and blend until smooth. Add more milk if a thinner consistency is desired.

  5. This is great when your gal friends get together. I put these in a brandy glass and a couple berries on top. Nice and thick with frozen mangos to eat with a spoon.
