Bell Peppers are bountiful this time of year, so I try to use them where ever I can. I love using peppers in all different ways:

  • As a Garnish
  • Stuffed with Grains
  • In Salsas
  • In Dips and Sauces
  • In Stir-Fries
  • In Side Dishes

Bell peppers come in all different colors, so whenever I’m looking to add a punch of color in soups, salads, stir-fries, or salsas, I turn to these brightly colored vegetables.
