Chai Tea

With a bit of a break between Christmas and New Years, it seemed like the perfect time for a warm cup of Spiced Apple Cider or Chai Tea.  I love warm spiced beverages as they provide pure and simple comfort.

What could be better than cozying up on the family room couch with a soft blanket and a nice cup of Spiced Apple Cider or Chai Tea. Both of these beverages are made with warm spices like cinnamon, cloves, star anise, and allspice.

Here are recipes for Spiced Apple Cider and Chai Tea.  Enjoy!

Spiced Apple Cider

This smells so good! Some recipes I’ve seen call for sugar.  There’s really no need since apple cider is naturally so sweet.

Spiced Apple Cider
Printable Recipe
4 cups apple cider

2 star anise
1 cinnamon stick
3 whole cloves
3 whole allspice
juice squeezed from 1 clementine

Place apple cider, star anise, cinnamon stick, cloves, allspice, and clementine juice in a medium saucepan.  Simmer for 30 minutes.

Remove spices, strain and serve warm.

Chai Tea

Adapted from Simply Recipes.  This Chai Tea is wonderfully fragrant.  The original recipe provides ranges for the amount of spices and cooking/steeping times.  Since I like a strong Chai, I used the upper range of spices and longer cooking and steeping times.

Chai Tea

Printable Recipe
Chai Tea Base
1 star anise
12 whole cloves
7 whole allspice
2 three-inch sticks cinnamon
7 whole white peppercorns
1 green cardamon pod, cracked open to release seeds
1 cup water

4 cups low fat milk or almond milk
2 tablespoons loose black tea leaves or 8 bags black tea (I used English Breakfast)
Agave nectar or honey, if desired

Place Chai Tea Base ingredients in a small saucepan.

Clockwise From Top Left: Green Cardamon, Cinnamon, Star Anise, Cloves, Allspice, White Peppercorn

Bring to a boil, then remove from heat.  Let steep, covered, for 20 minutes.

Add milk to Chai Tea Base and bring it just to a boil; then remove from heat.

Add tea to the milk mixture and let steep for 10 minutes, covered.  Strain spices from Chai Tea.  Serve with agave nectar or honey, if desired.
