I came up with this Festive Clementine Avocado Salad recipe as I was thinking about healthy and beautiful side dishes for Thanksgiving. Each ingredient in this elegant salad contributes health benefits as well as flavor and texture.
Avocado Oil is a heart healthy oil, rich and fruity at the same time
Radicchio is high in antioxidants
Figs are high in fiber
Pomegranate are high in antioxidants
Festive Clementine Avocado Salad

2 avocados, cut into chunks or sliced
1 cup radicchio, sliced
4 tablespoons walnuts, toasted
4 tablespoons dried figs, chopped
4 tablespoons pomegranate seeds
Clementine Dressing:
Drizzle with dressing just before serving. Serves 4.
