There’s nothing better than a bowl of homemade chicken soup when you’re feeling sick. Got an email last night that my friend who’s going through chemo for breast cancer just came down with a cold. Poor thing. She’s supposed to get chemo again in a few days, so praying that getting plenty of rest, fluids and some good ‘ol homemade chicken soup will help make her feel better quickly.
I put on a pot of chicken soup last night and let it simmer for almost 3 hours. To make it nutrient rich, I added onion, garlic, leek, carrots, celery, potatoes, sweet potato, and kombu. I also threw in some peppercorns, bay leaves and allspice berries. This recipe is from Rebecca Katz’s Cancer Fighting Kitchen. It’s basically her Magic Mineral Broth plus chicken.
